Carrot beans stir fry

Carrots beans stir fry is a healthy side for variety rice recipe .When I was young I used to tell my mom not to keep this recipe as a side dish in my lunchbox, she listen to me politely. But when I open my lunch box during lunch I will find the veggie stir fry in box. With little bit hatred I will have the food for longer time. As years passed I started liking it. Now I used to prepare this healthy recipe frequently. I hope some of you might have experienced one such incident during your school days.


Ingredients:

Medium sized carrot - 2 Nos

Beans - 150g

Green chilli - 2

Ginger small piece

Medium sized onion - 1 No

Salt to taste

Mustard seed -1/2 teaspoon

Oil - 2 teaspoons


Preparation:

Step 1: Wash the veggie in water. Chop the veggie into small cubes as shown. Fine chopping helps the veggie to cook faster. Step 2: Into a kadai heat the oil. Preferably coconut oil. Once the oil is hot add mustard seed.

Step 3: When the mustard splutters add green chilli and chopped onion. Sauté until onion are translucent.

Step 4: Now add the chopped carrot and beans. Cook for 2 - 3 minutes and add salt mix well.

Step 5: Do not add water. Cook well . Allow the veggie to cook with its natural juice on a medium flame for a while.


Step 6: Finally add grated ginger and coconut, mix well and switch off the flame. Adding ginger finally adds a flavour.

Now our carrot bean stir fry is ready.
