Pakkarkaai Puli kuzhumbu

Bitter gourd is a green vegetable with lot of health benefits. Most of us are afraid to buy or cook it, due to bitter taste as the name suggests. But it has anti-diabetics and also has anti-inflammatory properties. It is good to add bitter gourd in our diet. It is one of the curry that will not taste much bitterness even though it has bitter gourd. We can balance the bitterness in this bitter gourd curry by adding few ingredients. I hope viewers would try this recipe and share your feedback.


Ingredients:

Bittergourd - 100 g(remove the seeds while chopping)

Boiled cowpeas - 100g

Shallots - 10 Nos

Tomato - 1 No

Tamarind extract - 1/2 cup

Gingely Oil - 2 tablespoons

Kuzhumbu milagai podi - 3 tablespoons

Preparation:


Step1: Soak the cowpeas for 3 hours and boil in pressure cooker for four whistles. (You can replace cowpeas with black chickpeas). Cowpea is added to balance the bitterness.



Step2: Into a Kadai heat the gingely oil(Gingely oil add flavour to the curry), Add mustard or vadam of your choice. Once the mustard spluttered. Add Shallots and cook till translucent. Then add chopped tomatoes. Mix well.



Step3: Add the bitter gourd slices and fry well.



Step4: Its time to add boiled cowpeas. Add the cowpeas to kadai and mix well.



Step5: Add kuzhumbu milagai podi to the tamarind extract and mix well without any lumps.(You can replace kuzhumbu milagai podi with 2 tablespoons of red chilli powder and 3 tablespoons of coriander powder)



Step6: Add the tamarind and masala extract to the kadai. Cook the curry in medium flame for about 15 mins.
