Prawn Masala Rice š

I was born and brought up near coastal region, so I had lot of chance to explore varied varieties of sea food recipes. My love for sea food is humongous, especially fish, prawn and crab. I usually donāt prefer to have non-vegetarian recipes in my lunch as I find it difficult to eat except Prawn Masala Rice. Due to lock down and location constraints it is hard to find prawns š¦ . Last weekend we went to buy groceries all of a sudden I found this tiger prawns. We bought and came, without having any idea of āwhat to cookā. On way back home I just remembered about my school lunch box prawn rice recipe, I owed to prepare the recipe and share with you all. I tasted too Good. If you also get prawns in your locality do try this and share your feedback.
Ingredients:
Boiled Rice - 300g or 2 cups
De-shelled prawns - 300g
Finely chopped onion - 2 Nos
Chopped tomatoes - 2 Nos
Ginger and garlic paste - 1 tablespoon
Oil - 2 tablespoons
Fennel seed - teaspoon
Coriander leaves chopped- 1/4 cup
Kashmiri red chilli powder - 1 teaspoon
Salt as required
Cloves - 2 Nos
Bay leaf - 1
Cinnamon stick - 1
Garam Masala - 1/2 teaspoon
For marination of prawns
Turmeric powder - 1/4 teaspoon
Red chilli powder - 1/2 teaspoon
coriander powder - 1/2 teaspoon
Salt
Cumin powder - 1/2 teaspoon
Crushed pepper 1/2 teaspoon (optional)

Preparation:
Step 1: Wash the prawns well using salt and turmeric powder. Marinate the prawns with masala's mentioned above. Rest the marinated prawns for 15-20 mins.

Step 2: Heat the kadai and add oil. Cook the prawns on each side for 2 mins and remove it from the kadai. Keep aside. (Note: do not overcook the prawns.)


Step 3: Into the same pan add a tablespoon of oil. Add fennel seed , star anise, cinnamon sticks, bay leaf and clove. SautĆ© until flavours get into the oil and then add finely chopped onions š§ and mix well.
Step 4: Once the onions are translucent add ginger and garlic paste. Cook until you get rid of raw smell.

Step 5: At this stage add tomatoes š . Mix well. Cook for 3-4 mins. Now add salt for the Onion tomato Masala. Remember we already added salt in prawn marination. So add salt as accordingly. Then add Kashmiri red chilli powder and garam Masala and mix well. Cook for about 5 mins in medium flame. Add then add the fried prawns to the mixture and mix well.
Step 6: Now add 1/2 hot cup water and allow it boil for 7 mins in medium flame. After 7 minutes turn off the stove and add coriander leaves. Now our yummy Prawn Masala is ready. Mix the cooked rice and mix well. I was really tasty.
