Lemon Rice

Lemon rice is very simple and tangy food, that remind us about our school lunch box and travel memories. I had lemon rice in those days without knowing that lemon has good amount of vitamin C in it. Now I am having it by knowing the health benefits. This recipe is simple but quite tricky one because every ingredient need to be in balanced amount. Everyone will know this recipe. I am taking this opportunity to share my ratio that I used to prepare in house. Hope you all find it interesting and also give your suggestion in comment or chat section.
Ingredients:
Juice of one medium sized lemon
Cooked rice - 3 Cups
Salt as required.
Few coriander leaves chopped.
Tempering Ingredients:
Gingely Oil - 2 tablespoon
Mustard seed - 1 teaspoon
Urad dhal - 1 teaspoon
Chenna dhal - 1 teaspoon
Chopped ginger - 1 teaspoon
Turmeric powder - 1 teaspoon
Asafoetida - 1/4 teaspoon
Green chili - 2 Nos
Red chilli - 1 No(optional)
Few curry leaves

Preparation:
Step 1: Boil the rice . Important tip is that whenever we are preparing variety add salt to the rice and cook. It adds extra taste.
Step 2: For tempering, Into a kadai heat gingely oil (It adds taste as well as healthy).

Once the oil is hot add Mustard seed. Wait until mustard splutter . Then add chenna dhal and urad dhal. Once the dhal changes its colour add ginger, green chilli, turmeric powder, Asafoetida and curry leaves.

Step 3: Now switch off the flame and add the lemon juice and salt. This avoids the lemon juice being over cooked.
Step 4: Allow the tempering to cool down. When both rice and tempering cool down. Add coriander leaves and mix both well with a spatula.

Now our tasty lemon rice is ready. It will be more tastier few later.
