One pot Potato & Carrot fry.

Potatoes and carrots are universal veggies. These two are my favourite too. With help of these we can make a quick one pot and instant veggie fry or sabji. For this recipe we use only minimal seasoning but taste awesome. It goes well with toasted bread or chappathi.
The kids also would like this recipe as most of our kids loves to eat potatoes. You can send this in their lunch box along with chappathi.
Ingredients:

Medium sized carrot - 2 Nos
Medium sized potatoes - 3 Nos
Peas - 1/2 cup
Ghee/Butter - 2 teaspoon
Cumin seed - 1 teaspoon
Pepper powder - 1 teaspoon
Chat Masala - 1/2 teaspoon
Garam Masala - 1/4 teaspoon
Salt as required.
Preparation:
Peel the skin from carrots and potatoes. Cut them into 1 inch cubes. Do not finely chop.
Into a pressure cooker add ghee or butter. When the butter melts add cumin seeds. Wait till cumin seed gets roasted.
Its time to add pepper powder and roast it for 20-30 seconds.
Add all the veggies, salt, chat masala and garam masala and mix well.

5. Do not add water just cover the lid. The veggie cooks with help of its water content. Cook for only one whistle.

Our simple one pot veggie fry ready to eat.
