Mint leaves and ginger have anti-inflammatory properties. When both combines it gives amazing flavours. Mint thovaiyal goes well with idili ,dosa and even with plain rice. We can also batch this recipe make in weekend and store in fridge for 4-5 days in an air-tight container.

Ingredients:



  1. Ginger - 50g

  2. Red chilli - 3-4 Nos

  3. Mint leaves - 1/2 cup

  4. Coriander leaves - 1/4 cup

  5. Small gooseberry sized tamarind

  6. Salt as per taste

  7. Oil - 2 tablespoon

  8. Mustard - 1/2 teaspoon

Preparation:

  1. Peel the skin from ginger and cut into small cube. Into a hot kadai or pan add oil.

  2. Once the oil is nice and hot, add ginger and dried red chilli.

  3. Fry until ginger changes its colour as shown.


4. Then turn-off the stove add tamarind , mint and coriander leaves.

5. Allow the mixture to cool. Once it is cooled, grind it in a blender with less water or no water.

6.Temper it with oil and mustard seed. Add the tempering to blended mix.
