Thavala Adai or Adai Dosa

Adai Dosa is mixture of lentils and rice along with some tempering. It is a protein rich food. It is flavorful and crispy one. When I was a kid I didn't had interest in eating this lentil Adai Dosa. Now I like to have it once a week. I suggest you to drink more water after you have Adai dosa for your meal.


Ingredients:


Ingredients to be soaked and grind:


Chenna Dhal - 1 Cup

Whole moong dhal - 1/4 Cup

Toor dhal - 1/4 Cup

Urid dhal - 1 tablespoon

Idili rice - 1 1/2 Cups

Fennel seed - 1 teaspoon

Red chili - 4 Nos

Ginger roughly chopped - 2 teaspoon


(Ratio for rice and mixture of dhal is 1:1 and chenna dhal proportion need to be more for better taste compared to other dhal )

Ingredients to be tempered:


Mustard

Coriander leaves

Green chili chopped

Finely Chopped Onion -1 No

Asafoetida - 1/2 teaspoon

Few Curry leaves



Preparation:

Step 1: Wash and soak the lentils or dhal and rice separately for about 3 hours.

Step 2: Into blender grind the dhal mixture coarsely and the grind the soaked rice, red chili , ginger and fennel seed to a coarse paste.Mix both batter into a bowl.



Step 3: Now its time to temper, In a pan heat the oil and add mustard seed and urad dhal wait until it splutter.



Step 5: Now add chopped onion , green chili and asafoetida saute well and turn of the stove. Add bunch of chopped coriander leaves. (Coriander leaves gives extra flavor). Add the tempered mixture to the batter. Mix well.

Step 6: Into a heated kadai or dosa tawa grease some oil and spread the adai not too thick nor too thin.



Step 7: Add little extra oil for the adai to get cooked . Cook one side until the color changes. Flip it over and cook for 1 min in medium flame. Cook the Adai in medium flame for better taste.



Now our adai dosa is ready. Serve hot along the sugar. I think these two are ultimate combination.
